Low Carb Diet Questions and Concerns
Question from Audience: Why do all of the low carb diet books suggest that you not have any caffeine for the first two weeks?
Answer from Dr. Anderson: I don’t know. To be honest with you, I don’t know the answer. What I do know is this, I do know in medical school they taught me, first thing in the morning when you wake up, before you eat anything, which is when you’re fasting and you’re essentially in ketosis, that if you take a cup of coffee, the cup of coffee helps to raise your sugar a little bit and raising your sugar a little bit helps to give you some energy before you eat. So maybe the answer is that the caffeine increases your blood sugar a little bit — I do not know the answer for sure.
Question from Audience: Unintelligible…
Answer from Dr. Anderson: I would just count the carbs. That’s the thing, in the list I tried to give you as much information as I could: things to eat, things not to eat. “But then, what about this?” And when it comes to “what about this,” that’s when it’s time to count the carbs.
Question from Audience: Why do you eat so much processed wieners?
Answer from Dr. Anderson: Yeah, sorry. There was a time when we didn’t.
Audience: Do you still eat them?
Dr. Anderson: Yeah, we eat them. The thing is this, processed meat, including bacon, sausage, wieners, if they’re processed they’re cured and they can be cured with nitrates and nitrites. Nitrates and nitrites are known carcinogens. So what you should do is you should try to get uncured bacon, uncured wieners, uncured ham. But the problem is, when you buy it like that it’s very expensive. So it’s easier to buy hamburger than it is to buy hotdogs.
Why do we eat them so much? I eat them so much because I have a four year old. And man, he loves hotdogs. I have a four year old, and I have a six month old. So my wife is busy all day long taking care of the six month old and taking care of the four year old and so there’s not a whole lot of time to cook. Since there’s not a lot of time to cook, the hotdogs come out. I’m not advising anybody to eat a lot of hotdogs, it’s just protein.
Question from Audience: Unintelligible…
Answer from Dr. Anderson: You can buy it at Sprouts, where it’s on sale, half price, in bulk, but it’s not very finely ground. Or you can order it online from Amazon. The problem with almond flour is that it’s expensive. A pound of flour bought in bulk costs $1. A pound of almond flour costs, I don’t know, $7 maybe. That’s why food manufacturers don’t sell you anything made out of almond flour, ’cause they can’t make any money on it.
Question from Audience: I noticed at the beginning you were talking about …eye problems. Do you have some vitamins that you could suggest for your eyes?
Answer from Dr. Anderson: The only vitamins that have been clinically proven to help somebody with their eyes are vitamins for people who already have a certain kind of macular degeneration. The one thing I would say that would help with your eyes the most would be to lower your blood sugar, lower your blood pressure. So people who have macular degeneration, there’s a certain kind of eye vitamins that are proven to help them. But general eye health, do I recommend people take vitamins? No.

Answer from Dr. Anderson: The kinds of cheeses you’re supposed to use are cheeses that have active cultures in them. They’ll say cheese culture, they’ll say culture in there. And the reason is the culturing process eats up some of the carbohydrates. Now, cheeses that are made in a laboratory, like processed cheeses that aren’t really cheese, they can stay on a shelf at room temperature forever and be fine — those are something made in a laboratory by chemists. So if your cheese comes from a spray can, or if it can stay at room temperature forever, I wouldn’t advise to eat them.
