First of all, I’m not trying to convince anyone who’s not trying to open their eyes to the possibility that what they believe could be wrong. If you think this is something that’s right for you, try it and find out. You can only know from your own experience. But I’m not trying to convince you of something cos I’m right and this is the only way. I’m just asking you to try it to find out for yourself and decide for yourself.

Okay the three ways that I lost weight, we covered this earlier. Number one, run five miles a day and starve and feel hungry all the time, which is not physiologic. Number two, become a medical resident; get depressed and don’t eat. Number three, cut the killer carbs. And the best thing about cutting the killer carbs is that I feel good. The weight comes off, the blood pressure’s better, I feel good. I don’t have any side effects from blood pressure pills that are making me feel worse, and the killer carbs or the refined carbohydrates, the sugars and the starchy foods.

Somebody asked about food and we’ll talk about food – what to eat, what not to eat – after lunch. I don’t want to talk about food before lunch, because you’d be very hungry.

Most diets that work, they work because in some way they restrict refined carbohydrates. Whether it’s sugar busters that reduces sugar, or it’s Atkins diet that reduces carbohydrates or even if they say “You’re gonna eat a low-fat diet and it’s gonna be a calorie-restricted low fat diet,” that means they cut your calories down far enough that you’re eating pure calories every day than is normal. If they cut your calories down, they have to cut the refined carbohydrates down, too.

The problem about diets is that there are boxed diets where you buy meals, and you know that the meal that has the, the boxed meal is like this big and I never eat this much. I tell you the way that I eat, we’re gonna go through the slides and show you what I eat. I usually eat an enormous plate of as much of what I want and then after I’m done with that plate, I make another one. And as long as what I’m eating is low-carb, I can eat just as much as I want.

These boxed diet meals, they’re made to generate corporate profits. And they take a little piece of meat, a little tiny piece of meat, and they pop in some vegetables and some potatoes but those potatoes are low fat and it’ll be a low fat diet meal and they put as much cheap food in there as they can and sell it to you for $4. So you’re buying a little piece of meat that’s maybe $0.30 worth of meat, with $0.20 worth of vegetables and they call it $4 super diet meal.

There are also shots and medications and pills that are sold all over the Internet. And those things, they’re made to generate profits and they’re not normal; they’re not physiologic. Your problem is not that you suffer from a shot deficiency. You don’t suffer from a pill deficiency. The problem is the carbohydrates in your diet are making your insulin too high.

There are support groups, counseling and meetings you can go to every week, and I don’t want you to need counseling for your diet. People who need to go to counseling on a regular basis because of their diet, that’s because their diet is making them miserable. But if you feel great, and you’re losing weight, and your blood pressure is good, and you have energy to go to the basketball game to watch your kids, you don’t need a support group for that, even surgery.

And this is an interesting thing. So I’m sitting at the coffee shop and I meet this doctor — and this is one of the reasons I’m giving this conference — I’m sitting at the coffee shop and I meet this doctor who’s new in town and I talk to him and I say, “Hey, what do you do?” And he said “I’m a bariatric surgeon.” So he’s a surgeon who does lap band and stomach stapling and those sort of things for those people who are overweight and wanna lose weight with surgery. And I said, “Well, what brings you to Lubbock?”

I can tell you why I came to Lubbock. I came to Lubbock because I went to medical school here and when we moved off, I thought “Man, I really love Lubbock it was a great place.” And so we come back because of great people, they’re really nice, and it’s kind of quiet, we could raise kids there and it’s close to my family. So those are all good reasons to come to Lubbock, right? It’s a good place to be a doctor.

The reason the bariatric surgeon came to Lubbock is because Lubbock is the second most obese city in Texas. So he came here because it’s like he’s got a lot of clientele here. Have you heard of shooting fish in a barrel? Lubbock is the barrel and we are the fish. So your problem isn’t that you have a surgical stapling deficiency. You don’t have a surgical stomach stapling deficiency that needs to be corrected — your problem is refined carbohydrates.

Here’s an ad from the paper. Some of you guys saw my ad. “Look we got B12 shots. Buy 10, get 1 free!” These people, they want you to be a patient. This is interesting. Do you know why people need so much B vitamins and so many C vitamins? It’s because the carbohydrates in your diet suck, use up, they consume the B vitamins and the C vitamins.

Sailors get scurvy if they don’t get enough vitamin C. Sailors, they found that if they’re at sea for months and months on end, they end up with scurvy. And scurvy is when their gums start to rot away. And they found out that if they gave them vitamin C, they wouldn’t develop scurvy.

Inuit Eskimos, nine months out of the year, eat whale meat. And they don’t get scurvy. Why is that? They’re not eating limes, they’re not getting their fresh fruits and vegetables, they’re not taking vitamin supplements. They don’t get scurvy because the amount of carbohydrates you have in your diet determines how much of these vitamins you need.
